Back hand slice
Man are my biceps ripped from my hour long #tennis lesson yesterday. I wrote about it last night but I was a bit spent. Even though what I had just learned was fresh in my mind, my body was dead tired so I couldn’t find it in me to write on last night. I really enjoyed my lesson I had with Robert @ #tamarind reef in #greencay marina stx. We hit for an hour straight. He touched on how...

Planning a move to Kent Island
I’m planning on moving to Kent Island, Md. Hopefully before Feb. 20th my dad’s 70th birthday. I want to secure a great job in a kitchen on Kent Island as a line cook and earn 400-500 a week after taxes. Ideally I would like to work in a fine dining atmosphere which is highly professional as that is where I fit in best. I have several years experience in fine dining gourmet...

Tennis Lesson
I had a great hour long #tennis lesson today. I worked on my backhand slice. Which is may I say more versital than the groundy. I was getting it. I shanked alot of the balls but I hit the majority of my slices well. I worked on my forehand footing; where my feet should be before and after hitting the ball. My approach to the “attack” ball needs help. You gotta get up and get it...

Kitchen standards in design
Working in an orderly and organized kitchen is easier than working in one that is the opposite; disorderly and unorganized. The chef must set an example foremost in this area otherwise his subordinates won’t give a shit and naturally let their sanitation and cleanliness slide. Keeping ones station tidy and neat is essential to keeping up with service demands and the neater and cleaner your...

Busy Grill
Their were 15 Filet Mignon on the grill at one point tonight. 7 Mid Rare- 2 of those for service. 5 medium 2 Mid Well 1 Well Done, and then I had to mark off & grill 5 wahoo steaks. So needless to say there was a lot going on on the grill at once. I haven’t seen a grill this loaded in a long time. The key to making this happen was resting the steaks as they reached a certain...

Tennis
Driving to the laundry and putting in one big load of all my clothes basically including my cooking pants and whites. The timer read 27 minutes so I grabbed my sneaks and raquet and headed across the street to the tennis courts . I began by hitting on the wall. I was concentrating on getting my raquet back in one loop before comming forward with the raquet either my forehand or backhand. Also...

Day In The Life of EAS 12-12-11
Well I got to sleep in today. Things are cooling off here at night but it still gets plenty warm in the afternoon. I bought some new Spenco arch support flip flops at the local pharmacy. Hopefully they will help with my ongoing left heal pain. I bought a roasted chicken and a baguette at the market . Came home and had that with some of Kenny’s leftover kick ass risotto. Cajun Tim joined...
